Lexington Catering Win Four Medals At This Year’s Hospitality Show

The Lexington Catering team has taken home four medals at this year’s Hospitality Show, at the NEC Birmingham. These include a gold for Tamsin Roberts, Senior Sous Chef, and her healthy breakfast power bowls.

Jon Lilley, Group Development Chef at Lexington said, “The team did us proud! We really do work hard to push new healthy eating concepts and try to give our team the freedom to be innovative with their dishes. It was fantastic to see the team in action at the show and develop some tasty new dishes we can take back to our sites.”

Tamsin Roberts, Senior Sous Chef, scooped Gold, followed by Stephanie Lykourgou, Food Development Assistant Chef at Lexington who was awarded Silver and Jack Shaw, Sous Chef, at Lexington who took home a Bronze medal.

 Hospitality Show

The entrants had to create three different breakfast mini bowls using healthy low GI ingredients to deliver a super healthy hot or cold option with clean fresh flavours using low GI ingredients. Tamsin impressed the judges with her breakfast bowls. She served:

– Go Ape: Apple and cinnamon black quinoa with a nut butter and chia cream

– Eastern rise: Vanilla barley, grilled fig and plus, turmeric coconut cream, dates and apricot

– Season’s greetings: Lemon orange and ginger buckwheat porridge, blackberry nice cream, gingerbread granola, oranges and blackberries

Junior Lamb Competition

Louise Roberts, ‎Chef de Partie at Lexington, won a Silver medal in the Junior Lamb Competition. Louise joined Lexington as an apprentice chef. Since graduating she has gone from strength to strength and is now working as Chef de Partie at one of Lexington’s busiest sites.

Louise had just 30 minutes to create a main course dish for two covers taken from a 7/8 bone French trimmed rack of lamb. She impressed judges with the flavours and her expertise.
